Eggplant Parangana
1 Large Eggplant
1 Jar of salsa like Elpaso
4 Slices of Mozzarella Cheese
1 Cup bread Crumbs
1 Egg
1 Pak Choy
Crumb the eggplant with the egg and breadcrumbs
then place in pan with a little olive oil and cook till golden brown
cover the eggplant with a few spoons of salsa and put cheese on top.
place the lid on the pan with the heat very low until cheese melts.
Steam the pak choy and serve.
